Using their responses, we compile our Hot 100 list — a ranking of America’s 100 largest independent pizza operations (based on sales). Hot 100 Operations

  • The highest grossing single-unit pizzeria is Piece Brewery and Pizzeria in Chicago.
  • Ohio has the most Hot 100 pizzerias, followed by California.
  • The average Hot 100 pizzeria has been in business for nearly 25 years.
  • The average Hot 100 pizzeria has 3 units.
  • 35 percent of Hot 100 pizzerias have opened a new location in the past year.
  • 57 percent of Hot 100 pizzerias offer delivery.
  • 94% offer carryout.
  • 92% offer dine-in.
  • Of the Hot 100 pizzerias that offer dine-in, the average seating capacity is 142.
  • 46 percent of Hot 100 pizzerias offer online ordering.
  • 96 percent utilize a POS system.
  • 25% of Hot 100 pizzerias plan to purchase a new POS system.
  • 83 percent of Hot 100 pizzerias serve alcohol.
  • Of the Hot 100 pizzerias that server alcohol, 63% server beer and wine only.
  • The average Hot 100 pizzeria has been in business for 25 years.
