The price of beef is expected to remain at high levels for the near future. In February, beef prices reached $5.28 per pound — its highest level since 1987. Demand for beef and a reduction in American herds due to droughts have caused the price surge.

Some restaurants have already responded by finding ways to incorporate cheaper cuts of meat, creating more meatless menu options, increasing menu prices and promoting specials that do not feature beef.
