NEW YORK, NY, September 11, 2013 –– Pie Squared, designed by Global Test Kitchen (a Division of Dynamikspace, Inc.), Seattle, WA, is the winner of the 2013 International Hotel, Motel + Restaurant Show Foodservice Pioneering Concept contest. This concept will be presented in a scale model on the show floor through which show attendees/operators can experience the concept’s equipment, design and technology and be inspired to create new retail-generating venues in their own market segments. The concept is sustainable, energy efficient, operationally efficient and versatile.
“IHMRS attendees are not only looking for new products, but also for new applications that wow customers,” says Phil Robinson, IHMRS Show Director. “In the eyes of the judges, Pie Squared best achieved the competition’s objective to create a revenue-generating foodservice concept suited for an under-used, nontraditional location or an innovative concept for a traditional space, with limited water access and no ventilation.
According to Melanie Corey-Ferrini, FCSI, of Global Test Kitchen Group, “Pie Squared is inspired by restaurant trends and American attitudes. This concept combines the atmosphere of European bistros with the organic, healthy and local sensibilities that Americans demand. It resolves the fast-paced needs of business minds and a tech generation with a quality, fast-casual dining experience.”
In this concept, a new form of “pizza pie” is born – both sweet and savory pizzas are customized on four signature pie crusts and sauces. The Pie Squared concept is perfect for any meal and can go into any nontraditional location as it can be easily assembled and deconstructed.
The design showcases all sustainable materials while the flow and planning communicate an espresso-lounge-meets-local-bar/diner. Using authentic materials such as reclaimed wood, original graphics, stainless steel countertops, specialty lighting and LEDs, and an industrial metal floor, PieSquared embraces is contemporary and welcoming. The design is a “kit of parts,” using a plug-and-play system that can be constructed in a variety of nontraditional locations and that can be deconstructed easily and seamlessly. All pieces are segmented in 4’ sections for easy shipping and assembly Pie Squared is a concept with innovative menu, pre display, cook/chill, hoodless, SmartKitchen – all on a lean footprint.
Second Place was awarded to Herban Green by A La Carte Foodservice Consulting Group, Houston, and Third Place to California BBQ from Webb Foodservice Design, Tustin, CA; the graphic concepts for both of these will also be on display at IHMRS.

The 98th annual International Hotel, Motel + Restaurant Show will run Saturday, November 9, through Tuesday, November 12, 2013, at New York City’s Jacob K. Javits Convention Center.
