Creamy Shrimp Rotini

Ingredients
  • 1 pound dry rotini pasta
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon chopped garlic
  • ½ pound peeled and deveined shrimp
  • ½ cup sliced mushrooms
  • 1 cup chopped fresh spinach
  • ½ cup halved grape tomatoes
  • ½ cup good white wine
  • 1 pint heavy cream
  • ¼ cup grated Parmesan
  • 2 small dashes of nutmeg
  • Salt and pepper, to taste
Instructions
  1. Cook and drain the rotini.
  2. Sauté the shrimp and garlic in the butter and olive oil.
  3. Toss in the mushrooms, spinach, tomatoes and wine.
  4. Reduce wine by half.
  5. Add cream, Parmesan, nutmeg, salt and pepper and then toss in the rotini.
  6. Toss and serve hot!
