Greek Loukanika Sausage

Ingredients

  • 5 pounds boneless lamb shoulder, lean and fat ground
  • 1 cup red wine
  • 2 tablespoons garlic, finely chopped
  • 2 tablespoons grated lemon zest
  • 2 tablespoons ground allspice
  • 2 teaspoons chopped fresh oregano or mint
  • 2 tablespoons salt
  • 1 tablespoon pepper

Instructions Combine all of the ingredients in a bowl and mix very well. Fry a small “taster” patty ti test and adjust the seasonings to taste.

Topping suggestion: Mozzarella, garlic Loukanika, fresh tomatoes, thinly sliced red onions and feta cheese (crumble on the feta cheese before and after baking).
