- 5 pounds boneless lamb shoulder, lean and fat ground
- 1 cup red wine
- 2 tablespoons garlic, finely chopped
- 2 tablespoons grated lemon zest
- 2 tablespoons ground allspice
- 2 teaspoons chopped fresh oregano or mint
- 2 tablespoons salt
- 1 tablespoon pepper
Instructions Combine all of the ingredients in a bowl and mix very well. Fry a small “taster” patty ti test and adjust the seasonings to taste.
Topping suggestion: Mozzarella, garlic Loukanika, fresh tomatoes, thinly sliced red onions and feta cheese (crumble on the feta cheese before and after baking).
