  • 1 ready to use pizza shell
  • 8 ounces shredded mozzarella
  • 4 ounces shredded Monterey Jack
  • 8 ounces thinly sliced fresh ripe tomatoes
  • 4 (16-20) shrimp, spit and tossed in a ¼ cup Chile rub*
  • 2 tablespoons thinly sliced green scallion tops
  • Garnish after baking:
  • 1 teaspoon Texan gremolata**

  1. Make up the pizza layering the ingredients in the above order

Ingredients
  • *Chile Rub:
  • Yield: ¾ cup (enough for 12 large split shrimp)
  • 2 teaspoons finely chopped garlic
  • 1 tablespoon pure ground chile powder (more or less depending on taste)
  • 1 juices lime
  • ½ cup olive oil
  • 1 tablespoon finely chopped cilantro
  • Salt and pepper to taste
Instructions
  1. Method: combine all of the above in a small mixing bowl until well blended.
  2. Toss the shrimp to order using ¼ cup per order.
