Pizza Tricolor (Shrimp with Triple Herb Pesto, Fresh Tomatoes and Goat Cheese)

Ingredients
  • 1 ready to use pizza dough
  • 8 ounces mozzarella
  • 1 cup seeded and roughly chopped fresh tomatoes
  • 4 (16-20) split shrimp
  • 2 tablespoons triple herb pesto*
  • 1 ounce crumbled goat cheese
Instructions
  1. Spread the mozzarella cheese evenly over the dough and dot with fresh tomatoes
  2. Toss the shrimp pieces in a small bowl with the pesto until well coated and arrange them evenly over the pie.
  3. Crumble the goat cheese over all.
  4. Bake until golden.
  5. Garnish with whole basil leaves, parsley leaves or chives.

  • *Triple Herb Pesto
  • 1 cup packed basil leaves
  • ½ cup packed Italian parsley leaves
  • ½ cup finely chopped chives or scallions
  • 2 teaspoons chopped garlic
  • 1 cup olive oil
  • ¼ cup grated parmesan cheese
  • Pepper to taste
Instructions
  1. Puree the basil, parsley and chives in a food processor or blender until smooth.
  2. Add the garlic, olive oil, parmesan and pepper and blend until well mixed
