Tomato and Ricotta Pizza

Ingredients
  • 1 12-inch dough skin
  • 1 cup tri-color cherry “garden candy” tomatoes, thick slices
  • 4 ounces whole-milk ricotta
  • Handful of spinach
  • 6 cloves of roasted garlic, crushed
  • 1 tablespoon extra-virgin olive oil
Instructions
  1. Spread olive oil evenly over dough.
  2. Sprinkle roasted garlic, followed by dollops of ricotta.
  3. Then layer tomato then spinach on pizza.
  4. Drizzle with olive oil and bake.
  5. Remove from oven.
  6. Slice and serve.
