When people find out what I do for a living, I’m often asked two questions: one, do I ever get sick of pizza and two, what’s the best pizza. (I’m usually not sure if people mean in the city, the country or the world. I have my favorites, of course …)
As for tiring of pizza, I could literally eat it all day, every day. My family typically orders every Friday, but there’s usually another night during the week where we grab a take and bake for a quick dinner. Still, I know this isn’t the case for everyone. That’s why having options on your menu can be paramount, especially when you’re dining with a group and the phrase “I don’t want pizza” is tossed out.
I’ve made quite a few fantastic pasta dishes in my time in the Pizza Today test kitchen. I’ve learned to appreciate more than just a Bolognese sauce (but still one of my favorites), but still don’t quite get the allure of Alfredo, which is Editor-in-Chief Jeremy White’s greatest love. One of the best I’ve tasted here is the gnocchi and gorgonzola cream sauce. Before my palate became a little more refined, I found gorgonzola to be sharp, bitter and difficult to stomach. Now, I can eat an entire block myself (especially with fig butter and pears!). Give our gnocchi recipe a go … but remember that a little goes a long way!
