I will be the first to admit I’ve never used a drive-thru pizza window. Simply put, we don’t have one nearby. I am well-schooled in the art of carryout, however, which took center stage in our September 2000 issue.
Since then, we’ve seen a number of large chains make carryout windows mainstream, including Pizza Hut and Little Caesar’s. Take-and-bake also has grown in popularity (with Papa Murphy’s as a one of the largest take-and-bake companies in the world).
If there’s one lesson we can offer it’s this: carryout as a part of your business, whether drive-thru, customer pick-up or take-and-bake, is only as good as your packaging. Giving your customers a cheap, flimsy box doesn’t instill much hope for your product as a whole, and it won’t get your customers coming back. Sure you can have a great pizza, but if folks can’t get it home in one piece, there’s no sense in offering carryout.
