A look at pizzerias around the U.S.
Local Myth Pizza | Chelan, WA
Local Myth capitalizes on the lake town’s surrounding vineyards and orchards by serving more than 30 local wines and hard ciders, in addition to 10 local craft beers. The scratch kitchen makes Italian sausage, chorizo and house sauces (marinara, basil pesto, creamy garlic leek, BBQ and sesame oil). Fans go crazy for the “Pepp Crunch” pizza. “First, we render the fat from a premium pepperoni, turning it into ‘bacon bits on steroids’, aka ‘crunchy pepperoni,’” owner Bob Doggett says. “The pizza is made with our famous house red sauce, topped with whole milk mozzarella, fresh basil, cremini mushrooms, black olives, thinly sliced red onions, ‘crunchy pepperoni’, Parmigiano Reggiano and Pecorino Romano. After baking, it is finished with ribbons of fresh basil.” Another featured pie is the Feta Florentine with spinach, tomato, feta, Kalamata olives, pine nuts, Parmigiano Reggiano and Pecorino Romano on a basil pesto. Local Myth’s pizza menu can also be made into calzones.
The Local Pizzaiolo | Toco Hill & West Midtown, Atlanta, Georgia
Pizza World Champion Giulio Adriani founded The Local Pizzaiolo, a cashless company that accepts credit, debit, Apple Pay and Android Pay. An on-site mercato sells truffle honey, pestos, flavor-infused olive oils and vinegars, as well as imported Italian pottery. In addition to Neapolitan classics, Giulio’s pizza menu gets creative with pies like The Gypsy with herb-roasted wild mushroom, fresh mozzarella, aged provolone cheese, fresh parsley, béchamel and truffle oil. The Mona Lizza features spicy “nduja,” fresh ricotta, slow-roasted yellow tomatoes and is drizzled with hot honey.

The new fast-casual pizzeria offers a customizable, build-to-order menu, as well as The Chef’s Latest and Hall of Fame menus. The Chefs Latest features the Thai Potsticker with Asiago, smoked mozzarella, smoked provolone, garlic-infused chicken sausage, sweet Thai chili sauce, cilantro and Pizza Snob’s version of hot honey. The Garlic-buttered Meatball is a Hall of Fame pie that is topped with goat cheese with a blend of mozzarella and provolone, garlic-buttered meatballs, shredded Parmesan, olive oil and fresh basil.
