Greek Green Sauce

If you want to offer a whole new direction for one of your specialty pizzas (particularly one topped with chicken), consider forgoing pesto in favor of a unique “Greek Sauce.” Simply sauté spinach with olive oil, garlic and chopped red onion. Add salt and pepper, to taste. Spread the spinach mixture on a pizza crust along with green and black olives. Finish with chicken and crumbled feta cheese and bake. It’s not for everybody, so try it as a daily or weekly special first to see if your customers beg for it or pass on it.
