Twenty years ago, former construction worker Nick Sarillo opened the doors to Nick’s Pizza & Pub in Chicago’s northwest suburb of Crystal Lake as a place for families to gather, kids to play and parents to relax. Ten successful years later, he opened the second Nick’s Pizza & Pub in nearby Elgin. With a strong dedication to company culture, community and his hardworking team, Nick turned Nick’s Pizza & Pub from a neighborhood pizza restaurant to a community institution with a business model that most restaurants can only dream of replicating. This June, Nick’s restaurants are celebrating their milestone anniversaries with promotions and events for the community.
Community At The Core.
Since opening twenty years ago, the dedicated team at Nick’s Pizza & Pub’s goal is to provide the community with an unforgettable place to connect with family and friends, to have fun and to feel at home. In 2009, at the height of the financial crisis, Nick set out to help the community by starting “Half Off Mondays” and “Take Out Tuesdays,” which allowed guests to buy one pizza, and get one free through dine-in and carryout. Nick promised to continue the promotion until the unemployment rate for Kane and McHenry Counties were in the single digits again. Though unemployment rates have since improved throughout the region, Nick’s Pizza & Pub still offers “Take Out Tuesdays” for its faithful guests. Along with that, Nick’s Pizza & Pub hosts countless fundraisers throughout the year for the community.
More than ten years ago, Nick started Nick’s University as an internal process for training his team to become better trainers and teach employees life skills, and it has since evolved to a leadership course offered to the public—often times other companies (and restaurants) that want to learn from the successes of Nick’s Pizza & Pub. It’s working too—in an industry with annual turnover of 100-150 percent, Nick’s Pizza & Pub maintains less than 25 percent turnover with nearly 200 team members.
Split into three separate courses with hands-on, experiential learning, the Nick’s University challenges participants physically, emotionally, mentally and spiritually. Through the class, participants learn “The Power of Purpose and Values in Business,” “Trust-and-Track© Leadership Systems” and “How Nick’s Has Built a Culture of Trust.” Nick’s University training schedule can be found here.
Inspired by the positive feedback and results, Nick wrote his first book, “A Slice of the Pie” in 2012 where he shares his experience building “a big little business.” Through the book, readers learn how Nick’s Pizza & Pub became one of the top ten busiest independent pizza restaurants in the country, with two locations that gross about six times the revenue of the typical pizza restaurant.
Celebrating 20 Years.
This June, Nick’s Pizza & Pub is celebrating 20 years in the community at the Crystal Lake location, and 10 years in the community at the Elgin location. In honor of the special anniversaries, Nick’s is offering a “Celebrate the Signatures” promotion throughout June, and hosting anniversary parties for the whole community at both locations.
Crystal Lake’s twentieth anniversary celebration will take place on Sunday, June 21and the Elgin’s tenth anniversary celebration will take place on Sunday, June 28. Both events will be lively, outdoor parties complete with classic festival-inspired games and activities including ring toss, bean bag toss and more. Guests will even have a chance to pop a water balloon on their favorite Nick’s employee!
