Gluten-free Goes Mainstream

California Pizza KitchenCPK launches new gluten-free pizza menu. In an effort to appeal to the more than 3 million Americans who suffer from celiac disease and other gluten sensitivities, California Pizza Kitchen has become the latest big-chain company to add gluten-free items to their menu. Pizza, in fact, including the company’s Original BBQ Chicken, Pepperoni, Mushroom Pepperoni Sausage and classic Margherita pizzas.

Nation’s Restaurant News reports that the company will use specially designated tools, pans and gloves that are blue in color to designate them as gluten-free. High-sided pans will reduce the pizzas from coming into contact with ovens walls and flooring.

The Food & Drug Administration announced earlier this year that it has standardized regulations and usage for the term “gluten-free” beginning in August 2014.
