Tuesday, October 17

The keynote heads Rubirosa Pizzeria and Ristorante in New York City and is the heir to legendary Joe & Pat’s on Staten Island.

This Pennsylvania baker and pizza maker extraordinaire from Collegeville Italian Bakery Pizzeria Napoletana, who will show you a smash-hit breakfast pie.

Eric Shepherd

The director of marketing for 12-unit OTTO Pizza of Portland, Maine, will speak about low-cost, high-impact marketing principles and tactics.

Nino Coniglio and John Arena

The Pizza Maker of the Year winner in 2016 at Pizza Expo and owner of Williamsburg Pizza in Brooklyn, Nino Coniglio will team up for a demo with John Arena of Metro Pizza in Las Vegas.

Paulie Gee, Mark Iacono and Roberto Caporuscio

These “new guard” pizza icons from New York will talk 21st-century pizzerias with Scott Wiener of Scott’s Pizza Tours.

Wednesday, October 18

Sal Basille and Francis Garcia

The renowned Pizza Masters from the Cooking Channel will entertain with stories of growing up in the restaurant business and their TV show travels.

Michael Shepherd

The restaurant owner and consultant leads a workshop on How to Reach 20-Percent Profit and $1 Million in Sales. (Also offered Tuesday.)

Frank Pinello

Owner-operator of the Brooklyn slice shop Best Pizza and host of the “Pizza Show” on the Vice network, he’ll present some of his top slice sellers on the demo stage.

World-champion Pizzaiolo and Pizzeria Owner

Tony Gemignani

The famous San Francisco pizzaiolo, who now has an ownership stake in 16 resturants, teaches Grandma and Detroit-style pizzas on both Tuesday and Wednesday.

Giulio Adriani

A native of Rome and former head instructor for the Associazione Verace Pizza Napoletana, he’ll demonstrate his methods for making a standout gluten-free pizza.

Dan Richer

This Jersey City owner-chef at Razza Pizza Artigianale is a two-time James Beard semi-finalist who will show his techniques for naturally leavened pizza dough.
