Johnny di Francesco of Melbourne, Australia’s 400 Gradi debuts a pizza called the Super Cheese featuring 99 cheeses –– that’s right 99. You may know di Francesco. He was crowned ‘Best Pizza Maker’ at the Pizza World Championship in Italy over the summer. The launch coincides with the new “Teenage Mutant Ninja Turtles” movie, in which Michelangelo fantasizes about such a creation.
First, di Francesco melts down 94 to make a “cheese paste”, chills the mixture until it becomes a block of blended cheeses, according to Metro.co.uk. He then tops the pizza with the cheese blend and bakes. To finish the pizza, he adds fior di latte, buffalo mozzarella, goat cheese, ricotta and raspadura before serving.
