Recipe type: sauce
- 1 cup chopped flat-leaf parsley
- 2 peeled garlic cloves
- ¼ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¼ cup extra-virgin olive oil
- 3 tablespoons grated parmesan cheese
- Combine all ingredients in a food processor or blender.
- Process until a smooth, thick paste is formed
- Place about 1 tablespoon of the parsley sauce in the center of a bowl of tomato soup.
