Italian Cake with Ricotta and Chocolate

  • 21/3 cups flour
  • ¾ cup sugar
  • 1 cup butter, sliced
  • 1½ teaspoon baking powder
  • 1 egg
  • 1 tablespoon milk
  • 14 ounces fresh ricotta
  • ¾ cup sugar
  • 1 cup semi-sweet chocolate chips
  1. In a large mixing bowl, mix the flour, sugar, baking powder, egg and milk.
  2. Add the sliced butter and work in gently.
  3. Take half the mixture and press into 9-inch baking pan that has been greased with butter and dusted with flour.
  4. Coat the bottom of the pan with the mixture.
  5. Mix the ricotta and sugar with a fork.
  6. Add chocolate chips and mix again, then spread over top of crust mixture in bottom of baking pan.
  7. Take remaining crust mixture and crumble over the top of the ricotta-chocolate filling.
  8. Bake one hour at 320 F.
