Tortellini with Meat Sauce
Recipe type: entrees
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 1 cup chopped yellow onion
  • ¼ cup finely chopped flat-leaf parsley
  • ½ pound sweet or mild Italian sausage
  • ¾ pound ground chuck
  • 2 quarts tomato puree
  • 1 tablespoon dried oregano, crumbled
  • 1 tablespoon dried basil, crumbled
  • ½ teaspoon sugar
  • Salt and freshly ground pepper, to taste
  1. In a large pot set over medium heat, warm the olive oil for 1 minute.
  2. Add the garlic, onion and parsley.
  3. Raise the heat to medium-high.
  4. Add the sausage and the ground chuck.
  5. Cook and stir until the meat is no longer pink (about 4 minutes).
  6. Add the tomatoes, oregano, basil, sugar, salt and pepper.
  7. Bring the sauce to a boil, reduce the heat, and simmer for 1 hour, stirring occasionally.
