Prosciutto & Arugula Salad Pizza

  • One 12-inch pizza shell
  • 2 tablespoons extra-virgin olive oil
  • 4 ounces smoked mozzarella (provola) or fresh mozzarella, thinly sliced
  • 1 cup clean arugula
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • 3 ounces thinly-sliced prosciutto cut into strips
  1. Brush the pizza crust with olive oil.
  2. Arrange the mozzarella over the crust, leaving a ½-inch border.
  3. Bake. (This is the prep, and it can be done up to 2 hrs. ahead and held.)
  4. To order, toss the arugula with the olive oil, vinegar, salt and pepper.
  5. Cut the pizza into 4 triangles.
  6. Plate the pizza slices.
  7. Spread the arugula over the cut pizza shell.
  8. Arrange the prosciutto over the arugula.
  9. Serve.
