Quick Tomato Vinaigrette

- 6 ounces red wine vinegar
- 2 teaspoons Dijon mustard
- 1 teaspoon sugar
- 1 teaspoon fresh chopped garlic
- 1 ½ cups pure olive oil
- 1 ½ cup tomato sauce
- Salt and fresh ground pepper to taste
- Feta or bleu cheese diced
- In a food processor, mix together the vinegar, mustard, sugar and garlic.
- With the processor running on slow, add oil and tomato sauce.
- Then season with salt and pepper and diced feta or blue cheese.
