Quick Tomato Vinaigrette

  • 6 ounces red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon sugar
  • 1 teaspoon fresh chopped garlic
  • 1 ½ cups pure olive oil
  • 1 ½ cup tomato sauce
  • Salt and fresh ground pepper to taste
  • Feta or bleu cheese diced
  1. In a food processor, mix together the vinegar, mustard, sugar and garlic.
  2. With the processor running on slow, add oil and tomato sauce.
  3. Then season with salt and pepper and diced feta or blue cheese.
