Meat Sauce from Sicily

  • ½ cup extra-virgin olive oil
  • ½ cup chopped onion
  • 2 pounds lean ground beef
  • 1 cup dry white wine
  • ¼ cup red wine vinegar
  • 1 teaspoon lemon zest
  • 1 teaspoon lime zest
  • 3 cups canned plum tomatoes, juices drained, tomatoes crushed by hand and drained again
  • Salt and pepper, to taste
  1. In a large sauté pan, add the olive oil and the onion.
  2. Sauté until the onions soften.
  3. Add the ground beef and cook and stir until the meat loses any pink color.
  4. Turn the heat to high.
  5. Add the wine.
  6. Cook off the wine.
  7. Add the red wine vinegar.
  8. Cook on high heat for three minutes more.
  9. Stir in the lemon zest and the lime zest.
  10. Add the tomatoes.
  11. Cook the sauce for 45 minutes to 1 hour, until it thickens slightly.
  12. Add salt and pepper.
